It's not that he's gone bipolar or anything. This is literaly a "good" man pushing through his own morals and ethics. Every time he wavers he becomes stricter and harsher not with others but with himself to make sure he keeps going.

That is very true. He didn't develop a split personality, he just chose a darker path to get what he desires and did whatever it takes to see it through. He was much wavered at first (he almost had a mental breakdown when he killed the alchemist) but then he became, well, much more decisive and savage (that bitch slap was epic!).

Saint Germain's voice actor is Bill Nighy, who played Davy Jones in Pirates of the Carribean, Elder Vampire Viktor in Underworld and Rufus Scrimgeour in Harry Potter series. And I dare say he handled this role perfectly. I can really feel St Germain's confliction and determination through his voice.
