When Richie and Carmy were talking in the refrigerator in the first episode Richie was telling him about his expenses for the divorce lawyer. Also Richie asked his daughter when he brought her to school about Tiff's boyfriend Frank. Just wanted to clear up any confusion.

Personally I like to compare it to a concert - you're paying a few hundred bucks one time for an experience you'll never forget, and the people you go with make a huge difference. The meals are actually pretty filling most of the time too, since they're small plates, but often 8-15 courses, even up to 30 in some cases.

It's been brought a few times during The Bear, one thing to note for fine dining restaurants like the one showed here is that while each individual course is small ---the experience has many, many courses (depending where you go anywhere from 5-12 plates usually) You aren't likely to leave hunger, especially if you opt in to drink pairings with each course. Especially if they end up tossing extras like shown in the episode, its such a fun way to experience the height of someone's cooking ability and creativity---that I absolutely loved every time I have gotten the chance to go somewhere like this. This was my favorite episode of the season, I'm so glad to finally watch y'alls reaction. Looking forward to the rest

Three stars are the most amount of stars you can get and one is the least. The stars they are talking about are Michelin stars (yes the tire company). Michelin started making a restaurant guide back in 1900 to promote restaurant so people would take trips to visit them to wear out their tires. Michelin stars are now considered the best rating system for restaurants in the world. One star means the restaurant is very good in its category. Two means it is worth taking a detour in your trip to visit the restaurant. Three means the restaurant is worth taking a trip just to eat there.

They went to Pequod’s Pizza which is legit deep dish in Chicago. But I do think they messed with the pizza too much and ruined what deep dish is supposed to be. Still it’s neat for a tasting menu restaurant

At no extra cost, but the tasting menu dinner at that restaurant runs $325 per person, so pretty sure they'll still be fine even with the comped deep dish. They shot the episode at a real high-end Chicago restaurant called Ever, but the actual restaurant only has one Michelin star, not three. And nobody has ever rated it as the best restaurant in the world as far as I know (but even getting just one Michelin star is still a really big deal).

Fantastic episode, glad y’all liked it. To clear a few things up: 1. The impromptu pizza surprise for that table was just that - an on the house surprise, going above and beyond. They can’t just serve a Pequod’s pizza as is because it would mess with the pacing and theme of the dinner (which is often already 5 to 7 courses at these places), but giving them a little ‘elevated’ taste of something they weren’t going to be able to try? Unsolicited and on the house? That’s amazing customer service and hospitality. Can’t clown that, guys. 2. Richie is divorced from his ex. He simply chooses to wear the ring because he clearly still loves her. :( 3. As others have mentioned for Lupa, the Michelin star rating goes from 1 star (the lowest and most common, but still exceptional) to 3 stars, the latter of which this unnamed restaurant and the likes of NOMA are, and the former of which is like the Filipino place Syd went to in episode 3. So The Bear is gonna be great and a lot of fun, but still fairly casual and far less pricey than this place. 4. When Chef Terry said she didn’t do favors, I expected a reaction of some sort like I had. Lol. That line is basically already saying to the audience (and Richie) that she didn’t take him on as a favor to Carmy, but because he was vouched for as being talented, capable, good with people. She wouldn’t have taken him otherwise. That’s high praise and says how much Carmy cares about Richie without having to spell it out (which the episode oddly does a minute or two later). 5. Without spoilers, just keep in mind the opening of this episode. It was a dialogue about leadership. Syd was the one watching/listening to the coach as she worked on her dish, then it showed Carmy and Nat and crew at the restaurant, but then the episode cut to and remained focused solely on Richie..

In the United States, there are 230 restaurants that currently have any Michelin stars, out of nearly 160,000 non-chain restaurants in the country. New York City has more Michelin-starred restaurants than any other city in the US - 69. Chicago also has a lot (21), as does California (85), and then there are some in Washington, DC and Florida as well. Only 13 American restaurants currently have three Michelin stars - 4 in NYC, 3 in San Francisco, 2 in Chicago, 1 in DC, 1 in San Diego, and 2 in Northern California (Napa and Sonoma Counties). Anyway, getting even one Michelin star is still a pretty big deal, and it puts you comfortably among the very best restaurants in whatever city you are in. Only 21 of the 7,000+ restaurants in Chicago have any Michelin stars.

Those are the original rating explanations. These days one star is enough to take a very sizable detour if you are looking for fine dining options. They've adjusted the definitions since then - and I believe some requirements were removed, like having to have set tasting menus and no a la carte. The Michelin site usually has great restaurant recommendations in case you are looking for interesting food near you. They do include notable restaurants that didn't get stars. Admittedly more useful if you are in a major metro area.

They shot this episode at Ever, an actual restaurant in Chicago (though this version is fictionalized -- the real one has two Michelin stars, though the chef Curtis Duffy is also known for his former three-Michelin star restaurant Grace). It opened May 2021 just after the COVID vaccines were made available. The restaurant actually looks like that. The skeleton in the kitchen ceiling is apparently because the chef has a thing about skeletons. When I ate there they served this pea puree shaped like a skull. It was delicious but definitely "art food" lol

With the whole getting a Michelin star for the Bear I hope that atleast in season 3 that their is an arc for Syd to realise that you don't need one to be recognised as a great chef or restaurant. It's crazy how young chefs always fight to have one or keep it when you hear veteran amazing chefs like Marco pierre white just talk about how bullshit the whole system is.

The point of the Michelin restaurant is not JUST the food. It's totally fine to not be interested in more than food when you're the customer but I hope they'll start to get as the show goes on that it's also about the pageantry, the service, and the experience. That deep dish would 100% not be on their bill either, despite they used resources that cost the place money, because the people who grant the stars grant them (typically) for exemplary SERVICE going above and beyond for your patrons. Real places like this in New York have gone so far as to get someone a dog from a Hot Dog Cart because they overheard someone was leaving the next day and mentioned they had forgotten to ever try one. The point is to be extra because you are paying for that extra.

To be fair, getting even just one star is still a really big deal. There are currently only 230 restaurants in the entire country that have any Michelin stars at all. That might sound like a lot, but keep in mind, there are more than 150,000 non-chain full service restaurants in the US - 99.85% of them do not have any Michelin stars. Having just one Michelin star still means you're among the top 0.15% of all restaurants in the country. Chicago has 21 restaurants with Michelin stars (only two of them have three stars), NYC has 69 Michelin-starred restaurants, and California has 85 of them. The remaining 55 are spread around the country in cities like Washington, DC and Miami, FL.

I think this is the most heart-warming episode of the entire series, and definitely one of the best. But in terms of pure brilliance, it's pretty damn hard to surpass Fishes (2x6). From the dialogue, to the blocking, to the emotional heft, to the chaos, it encapsulated what makes Carmy and Sugar the people they are perfectly. I didn't feel good at all after I watched that episode, but I definitely emerged from it thinking "everything makes sense now".

Richie having this character development is amazing and definitely shows how much of a peoples person he is. He no longer has to be the replacement or the fill-in for Michael and can now venture out into himself and become Richie because let's face it. Richie definitely was trying to fill the hole Michael left by being overly aggressive and rude so now that he realizes time is catching up on him. He has to tighten up. People believe in him and I wish Michael had gone through something similar to Richies because their situations somehow parallel each other

Regarding the deep dish pizza bit. The chef immediately notices the pizza was burnt black on the sides. So he plated it by cutting out sections in the middle that he could salvage and added complimentary sauces. Also this was a surprise add and they didn't charge extra, it was a service for the customer.
