I know yall aren't even halfway on Bebop yet, but I just wanna throw Outlaw Star and Trigun in the ring as potential future shows. Back in the day they were kind of considered to be a triple threat with Bebop being the third.

Trigun and Bebop have the same composer. Definitely has the jazzy/western vibes. Bebop has a fantastic OST, but Trigun is a little more western and less experimental with it. Both shows are definitely fantastic.
