Pitou is more notably feminine in the anime version than the manga, so a lot of fans tend to go with: male in the manga, female in the anime.

About what you said about wing-san. I think the chimera ants are generally tougher baseline then humans so maybe forcing the nodes open doesnt negatively affect them? Not too sure though. Also cause neferpitou was already born with nen i dont think gon is really at fault, also they caught that arrow guy as well.

Yeah people always debate whether Pitou is a she or he mostly because appearance wise in the anime Pitou definitely looks feminine but manga doesn't really depict Pitou like that. Also, Pitou is never referred to as a female in terms of pronouns so it's just an ongoing debate. Point is that it's usually obvious in HxH (most females got the melons besides Bisky) but because it's never explicitly stated in the manga it's just something unconfirmed. Anime gave Pitou a feminine voice and appearance so people go with female.
